Steak Doneness Guide
From rare to well done, knowing your temperatures takes the guesswork out of grilling. Use this guide to cook your steak exactly how you like it.

RARE
Cool red center with a soft, tender texture. For rare steak, aim for an internal temperature of about 120–125°F.
MEDIUM RARE
Warm red center with a juicy, tender bite. Aim for about 130–135°F. A favorite for many steak lovers.
MEDIUM
Warm pink center with slightly more firmness while still retaining plenty of juiciness. Aim for about 140–145°F.
MEDIUM WELL & WELL DONE
For medium well, aim for about 150–155°F with just a hint of pink. For well done, cook to 160°F or above.
Remove your steak from the grill a few degrees before it reaches your target temperature. Carryover cooking will continue to raise the internal temperature as the steak rests.
